Kids and low carb
Children can most certainly eat a low carb diet, this is only beneficial for them. However if they do not suffer from obesity, diabetes or other elements like ADHD then you can add both fruit and vegetables grown beneath the ground and also potatoes (not french fries!).
Tips for things to add instead of pasta, rice or potatoes:
- Cauliflower mash
- Broccoli mash
- Avocado (whole or mashed with creme fraiche or mayonnaise)
- Fried mushrooms
- Boiled or grilled vegetables
- Cauliflower rice
- Salad (lettuce, tomatoes, peppers…)
- Gratins made with fennel, onion and cream in the oven.
How I wish I had not been so brainwashed by the establishment in the 1980s and 90s when I was raising my family. My poor children would have been saved so much grief had I fed them a low-carb rather than low-fat diet. Their childhood adolescent years were nearly destroyed by insulin-resistance-related problems. My daughter was morbidly obese and my son’s ADHD was crippling. Happily, they are now eating low-carb/paleo as young adults and are healthy and successful! I wish we could convince my partner’s children to stop feeding his grandsons a grain-based, low-fat, high-sugar diet. They are coming for dinner on Sunday and I will just serve the kind of food we normally eat and perhaps continue to try to influence them by example.
