'breakfast'
Today it's the simpler of breakfasts! We have some food left in our fridge so we might as well eat that...
Two boiled eggs, two cheese sticks and some coffee with (heavy) cream.
Good going here... Soon we will be checking out of our hotel, leaving the island and moving into the city, Houston. There we will be meeting the whole Low Carb group - can't wait!
Sleep in... Very nice! There is a coffee machine in our room and a fridge, so I am very pleased to be able to make myself some coffee, and (heavy) cream is in place!
Coffee in bed, and a couple of cheese sticks - enough for me!
We went in search of breakfast. But that was not so hard. Breakfast is served all over the place! Like that!
We landed up at a fastfood diner. Mainly hamburgers on the menu, but also a few breakfast alternatives. One was scrambled eggs with baconbits and melted cheese. Perfect! Thank you!
I was pretty happy when I heard that breakfast was included in the room. But when we arrived in the breakfast room this morning, we could just turn around and leave. :(
There was nothing that was even close to low carb! 4 Waffle irons, litres of syrup, cereals, muffins, danish pastries, bagels, jam and fruit yoghurt!
My first thougth was syrap - sugar, sugar, sugar! A lot of it!
But the one syrup was: SUGARFREE (?)
And the other one was: REDUCED CALORIE SYRUP (?)
My opinion is rather to remove the syrups than trying to substitute them with an as bad alternativ!
Other eats on the buffé were:
I had a pork chop left over from our braai, fried an egg, added some cheese and voila - LCHF breakfast! :)
A wonderful LCHF breakfast! Scrambled eggs made with eggs, cream and butter. Add some mayonnaise, LCHF hard bread with butter and a good cheese! Full forever!
Almost bread, a yummy LCHF breakfast sandwich...
Lots of butter, cheese and Spanish ham on top.
Recipe:
2 breads / 1 portion
1 large egg
3 Tbsp almond flour (or coconut flour)
pinch of salt
25 g melted butter.
Whisk egg, salt and flour in a bowl using a fork. Melt butter and add to the mixture. Divide into two smaller bowls (like a cereal bowl) and microwave for 2 minutes. Remove from bowl and allow to cool a bit.
Add your favorite sandwich topping and enjoy!

2 eggs mashed with 1 tbsp butter and 2 tbsp mayonnaise! Salt and pepper! Very yum and filling!
An omelett filled with meat, cheese, butter and leek! It's Monday - a call for good breakfast and eating habits! :) Coffe with cream coming up too!

Today - no kids at work! It's a teachers planning day. So I started off with a good and filling breakfast!

So now we are off to do some 'team work activity' - hopt it's fun!
Two eggs, 2 Tbsp organic butter! Salt and pepper! Mash together and enjoy. The amazing things with eggs is that they are so variable! I am a bit tired of omelettes but love todays variation of eggs.

Today in Sweden it's a bank holiday! What a great start to the week. So we had a barbeque breadfast! Lots of eggs and bacon! :)
The eggs had double yolks, twice as nice then!
Breakfast with a variation... Very nice! Cream, as in 'heavy cream', runny not whipped, over a bowl of walnuts! This was sooo good! :)
The extra fat is what make me full. So lots of butter, mayo and 2 eggs whisked together with cream! Delicious...

I have been eating egg, in various formations, for breakfast the past 4 years. And at the moment - I have had enough. Very sad to feel this way, as I generally love eggs... But today I just couldn't!
So instead I had cheese with butter and coffee with cream. Went very well and I am still full! :)
PS I did not eat all of the above! ;) The kids also had quite a few. I was fine after 4 or 5 of them cheese rolls!
Milk at breakfast went from reduced fat skimmed milk, to fat free milk, to strawberry milk and also chocolate milk! *Sigh*! What a nightmare.... I wonder how long it will take till people will learn what is healthy and what is NOT!
Very happy to say that the ship personal did have HEAVY cream for us low carbers! I could have my coffee then and the trip was saved! ;)
And the cereals are horrific! They actually put candy IN them! I say no more!

All these lovely ingredients in my fridge! Cheese, philidelphia cream cheese, eggs, ham, mustard, mayo, mini-peppars, seaweed salad, berries & cream! Oh yes and avocado... Sounding delish right? ;)
Eggs are just so good for you! They contain (organic eggs) everything the body needs bar vitamin C (that you can get from cabbage)!
Fats are essential for your body. So the combination is unbeatable!
Eat eggs and butter for breakfast, be healthy and stay full for hours! Enjoy!
Left Fish Hoek at 5am and now it's breakfast in Swellendam... Lovely little place... Ordered scrambled eggs, salmon, extra butter, avocado and coffee with cream!
South Africa is a great place to eat breakfast out! Very LCHF all the way! Just avoid the breads and jams! But the rest is wonderful.
Pure butter: never a problem - the only butter that is served! Cream for coffee - so far received it every time. Eggs, salmon, bacon, mushrooms - in all forms and ways!

I have just made a good low carb 'bread'! AND it is really quick to do!
Always enjoy trying new alternatives for eggs. Me and eggs you know, true 'love' ;)
Makes 2 'breads'
1 egg
1 dl / 4 tbs coconut flour or almond flour
pinch of salt
25 g melted butter
Mix the egg in a bowl with a fork, add 'flour' & salt. Melt the butter and add it to the mixture. Mix all together.
Divide up into 2 'soup' bowls and put them in the microwave for around 2 minutes.
Add your favorite sandwich toppings and enjoy!
Some eggs with butter for breakfast! And now a cup of lovely hot coffee and cream! A good beginning for this day! :)
