I have had a very hectic autumn. Amongst all the things I have been occupied with I have written a cook book: Lchf for the whole family!
It is now ready for prublishing. Very exciting and the book is truly stunning! Amazing photo's by an excellent photographer.
Hopefully it will come out in English too! Let's hope...

A Swedish company has made a cooling lunchbox. I know how often I have food with me when travelling for e.g. And my kids that take food with to school and on outings.
The lid keeps the food cool for 7 hours! You just put it in the freezer overnight and the next day it's ready to keep your food fresh! Me like!
Cut up a zucchini in cm thick slices. Take one teaspoon of your favorite cream cheese and put on each slice. Very yum and easy. Of course make sure the cheese is high fat!!! :)
A very sad day. Steve Jobbs is dead. Steve has been apples visionary and creative genius.

Fructose, also known as fruit sugar, is something we have always eaten, or is it?
A century ago a person ate 15 grams per day, and today we eat 4-5 times that amount.
Given the way the body breaks down fructose, that increase may be contributing to liver and heart disease, reports the September 2011 issue of the Harvard Health Publication, Harvard medical school.
Two recent studies have linked higher intake of fructose with higher chances of developing or dying from heart disease.
The breakdown of fructose in the liver does more than lead to the buildup of fat.
It also:
- elevates triglycerides
- increases harmful LDL (so-called bad cholesterol)
- promotes the buildup of fat around organs (visceral fat)
- increases blood pressure
- makes tissues insulin-resistant, a precursor to diabetes
- increases the production of free radicals, energetic compounds that can damage DNA and cells.
None of these changes are good for the arteries and the heart.
Researchers have begun looking at connections between fructose, fatty liver disease, and cardiovascular disease.
An article published in 2010 in The New England Journal of Medicine indicated that people with nonalcoholic fatty liver disease are more likely than those without it to have buildups of cholesterol-filled plaque in their arteries. They are also more likely to develop cardiovascular disease or die from it.
Higher intakes of fructose are associated with these conditions, but clinical trials have yet to show that it causes them.
Recomendations are still only to limit the amount of sugar you get from sugar-sweetened drinks, pastries, desserts, breakfast cereals, and more.
The human body handles glucose and fructose in different ways. Virtually every cell in the body can break down glucose for energy. About the only ones that can handle fructose are liver cells. What the liver does with fructose, especially when there is too much in the diet, has potentially dangerous consequences for the liver, the arteries, and the heart.
I myself have not eater fruit for 2 years, my body is lacking nothing and I am very healthy. Even if 'they' don't direktly recommend cutting down or out on fruits, that's what I would do, especially after reading the article in the Harvard Publication.

Currently there is a shortage of butter in Sweden! A tv channel here bought 'the last' 10 packages of butter (they claim) and have sold it on Tradera which is the Swedish equevelant to Ebay.
The final price was kr 5100:- = in Dollars: 741:- in Rands: 5980:- in Euro: 554 and in British pounds: 475:-
Which means an extremely high kg price for these 5kg of Swedish butter. But the buyer does get a few minutes on TV when he/she fetches their butter.
Obesity is a world wide problem! It is in fact a global epidemic!
On WHO (World Health Organisation) website you can read more about the facts around obesity!
- Obesity is classified as a preventable disease;
- Global obesity has doubled in the last 40 years;
- More people die from obesity than from hunger and starvation;
- Over 1.5 billion adults (above the age of 20) are overweight/obese;
- Over 45 million children under the age of five are overweight;
- Between 7% and 41% of cancers are attributed to being overweight;
- There are more overweight children in developing countries than in developed countries;
- Obesity and under-nutrition tend to co-exist;
- America spends over 10 million an hour on obesity related healthcare!;
Very scary statistics! And this is not due to the recent increase of butter consumption in Sweden the past few years!
So what do you think is the problem?
I reckon, I am totally convinced actually, that it is the sugar, starches, diet and light products and fast (bad) foods that is the problem!
My brother who lives in South Africa has always been very interested in health and foods. He has always spoken highly of coconut oil and how good it is for us. But I was very 'anti' - I avoided all and everything that looked like fat, and coconuta oil is 100% fat!
BUT he was right!
Organic coconut oil is really a miracle cure for the body and is awesome to cook with. It's the best fat (and ghee) that tolerates beeing heated without turning to transfatts as other oils do, and even butter.
Coconut oil is good for you if you:
- want to loose weight,
- lower blood pressure,
- have problems with stomach,
- have aches and pains in your joints
My jar of oil stand on my kitchen bench, next to the stove. It tolerates standing in room temperature and does not go bad.
A spoon of coconut oil in a cup of tea is really good for you. My tip is to take at least 2 tablespoons of coconut oil every day. It balanses your insluin well and they say it also protects the liver from damage caused by alcohol.
This juice for babies is from 1 years old, the reason for that is the small screw top that a baby can get stuck in their throat - but the contents is fine for babies under 1 years. This is what the website tells us.
But that's not enough! This baby juice contains 11 grams carbs per 100 grams. A coca cola contains 10,6 grams carbs per 100 gram.
Sqeezy has MORE carbohydrates (sugar) than coke!
On the packagingt it says:
"No junk: no artificial flavoring or preservatives, unsweetened, 100% fruit."
11 grams of carbs is the equevelent to 5,5 sugar lumps... But it is organic, which probably makes many parents think it's a good choice for their little baby/child.
I would think that people would react if they saw a 1 year old or younger drinking a can of coke, yet not many react when seeing a baby with a Sqeezy, in its colorful and child-friendly packaging!
Babies and chlldren should drink milk or water - now that's a healthy and good choice! What do you think?
I was lucky enough to see this whole lecture live in LA during the Ancestral Health Symposium 2011.
There were a few of us from Scandinavia participating, amongst who Ronnie Mathisen from www.lchfliv.com did some of the filming. He is even in the lecture in boxer shorts - also well worth seeing!!!

Apparantly Sweden is running out of butter! Due to the huge increase of the LCHF eating population, there is not enough butter to go around! How's that one?!? A good thing really but a bit weird though I must say.
I received an email from Nutrilett about a new and exciting product to help you loose weight and stay slim(?)!
This new 'wonderful' product is called 'EatWell' and is a meal replacement product, consisting of pasta (!), the same thing that lots of us claim is what makes us fat!
Few calories, lots of protein... Nothing about carbs?! This is all your body needs they claim, I am very doubtful! Easy to prepare whether you want to loose weight och keep your present weight! *shaking my head*!
Picture above is from their advert... Good thing they use a nice business-like red bag to entice readers, co's that little bowl of food would certainly not convince me to eat this! That would not fill me up at all and definately not keep me full for hours!
For me a total no-no! What do you think?
This is pretty scary! A children's book for 4-6 year olds about Maggie who is fat and gets bullied at school for it. She then starts to eat less, do more exercise and looses the excess weight at the same time becomes popular in school!
What does this tell us? What does this tell the children! You are worthless when fat, and popular when thin! You have to eat less food too look good! The children have to take responsibility! NOT OK!
No 4-6 year old decides what to eat, they don't buy and cook their food.
Kids definately choose sweet, sugar and starch IF they have the choice - but who gives them that choice? Who is responsible? Certainly not the kids!!!

I was home a bit late today! So quick and easy supper was of interest!

I enjoy reading articles like this! Even though there is always a little 'warning' or a piece saying that carbs are essential, this is still going in the right direction! Carbs are NOT essential, no-where does it say that the body MUST have carbs. But fat and protein are!

Venice Beach was an experience, in several ways! The 'MovNat' workshop was awesome, with 30 people learning how to exercise by only using their bodies and the environment!
The people along the promenade were very interesting, quite entertaining actually! :)
500 Health enthusiasts are gathered to listen to the big names within Paleo, Low Carb, LCHF and natural movement!

I am not very fond of flying, but I can admit that I felt pretty much safer up in the air than in the taxi from LAX to my hotel!
He drove as if the car was stolen!
I spent the morning making food to have with me on my long journey to LA!
A couple of wraps and also LCHF breakfast bread for the morning train trip. Now I am full and satisfied... On the train to Stockholm then fly to London, NY and finally LA! Yay!
I have been asked to write the recipes for a LCHF workout book! It is great fun but truly lots of work! Way more than I thought it would be. All ingrediens must be in weight and I have to work out how much protein, fat and carbs in every meal and at the end of the day.
This is a great challange... Deadline is near so I a working hard! :)
A wonderful LCHF breakfast! Scrambled eggs made with eggs, cream and butter. Add some mayonnaise, LCHF hard bread with butter and a good cheese! Full forever!
At the indoor pool today we had our pick nick lunch with us... As did the next family. The difference in what we give our kids to eat is pretty scary!
Their food:
Chocolate milk, sweet buns/muffins, cookies and cooldrinks ('juice')...
Our lunch consisted of 80%meat sausages, boiled eggs, cheese, salami, tomatoes and water... (And cream for the coffee)!
So many people just don't realize how foods affect children: moods, temper, agression, hunger....
We had 4 very calm and satisfied children after our meal anyway that could carry on playing without becoming over- or hyperactive!
I really enjoy my coffee, a few times every day... Thought I would find out how many carbs I am consuming!
I tested one mug of instant coffee with cream and one mug of filter coffee with cream.
The results are quite interesting!
I just realized that I consume quite a lot of carbs by drinking instant coffee!
My conclusion is to cut out instant coffee and cut down on filter coffee!
For one smoothie, mix together in a blender:
1 avocado
juice from 1 lime
1 tsp vanillapowder/essence
1 tbsp freshly grated ginger
200 ml heavy cream
100 ml mil
4 ice cubes
I have 4 weeks of holiday now! Lovely! But I do have some work to do too! I am writing all the recipes to a workout book! Such fun but quite a bit of work!
All recipes must state amount of carbs, protein and fat in each... And the total for a day.
A challange! I love a good challange! So here I sit and work a bit, but still enjoying summer...
3 - 4 chicken fillets
100 ml oil (canola/rape seed oil)
1 tbsp tomatoe pureé
1 tbsp dijon mustard
1 tbsp parpika powder/spice
dash of white pepper & salt
juice of one lemon
Mix all together in a small plastic bag. Lay the chicken in the bag and make sure all the filléts are covered. Leavet to baste for a few hours in the fridge.
Enjoy your bbq, this chicken tastes really great, very nice lemony flavor!

Bloody mary has always been one of my favorite drinks, and still is. I make a LCHF friendly version. Tomatoe juice has 3.5g carbs/100g, which can end up being quite a lot of carbs after many ml! But mixed with water makes it more LCHFnice!
4 ice cubes
4 cl vodka
freshly ground black pepper
1 tsp freshly grated ginger
1 tsp worcestershire sauce
1-3 drops of tobasco
100 ml tomatoe juice
100 ml water
1/4 lime (if you like)
Stir together and add a stick of celery.
Enjoy and have a good Friday!
Is it ok to eat LCHF (low carb high fat) if you are pregnant or breastfeeding?
Yes it is!
LCHF is natural healthy food. As simple as that...
The new mommy:
- stays healthy,
- gets less swollen (she won't carry as much water retention)
- gains normal amount of weight during pregnancy
- provides the unborn baby with all the nourishment it needs
If you are swollen for eg around ancles, feet and calves then you can also try to cut out or at least cut down on fruit. Eat berries instead, but in moderation. Fructose is not good for anyone. The nourishment you will still get from veg and good protein products of high quality!
I don't have any proof of this, it's what I have learned through tallking to those that are in the same situation, by reading on the subject and through own experiences, experiences of others and encounters with specialists that work with pregnancy and babies.
LCHF is perfect for the pregnant mommy-to-be and for those new moms that are breastfeeding. I am without doubt!
Natural food is the best for any body, for all, always.
What to eat:
- Proteins as in good quality meat, fish, eggs and chicken...
- Fats such as coconut oil, butter, omega-3, cream and cheeses...
- Vegetables (and berries) like avocado, cabbage, broccoli, cauliflower, berries (in moderation), aubergine, zucchini, ruccola, etc If your body is not very carb seinsitive then you can also eat underground veg such as carrots etc...

Good Morning, let the stress begin!
I bought two really mini pots of herba (leafy parsley and basil) from my local grocery store. Re-planted in a huge pot outside, and after 2 weeks I have loads of fresh herbs! Love summertime!
Almost bread, a yummy LCHF breakfast sandwich...
Lots of butter, cheese and Spanish ham on top.
Recipe:
2 breads / 1 portion
1 large egg
3 Tbsp almond flour (or coconut flour)
pinch of salt
25 g melted butter.
Whisk egg, salt and flour in a bowl using a fork. Melt butter and add to the mixture. Divide into two smaller bowls (like a cereal bowl) and microwave for 2 minutes. Remove from bowl and allow to cool a bit.
Add your favorite sandwich topping and enjoy!

I had a great workout at the gym! 3 exercises for legs, 2 for triceps and 2 for biceps, 2 stomach, 1 chest and 1 back! Full focus, got it done nice and quick, in slow burn style!
Then at home I ate one meaty sausage and 2 eggs with 2 Tbsp majo and 1 Tbsp dijon mustard mixed together! Very nice, filling and a good protein boost!
Tomorrow is a big day and on Friday is my big party! Flower Power Garden Party! :) 50 friends will be joining us in our garden.
When everyone arrives I want to have a nice LCHF punch to offer... My idea is:
Mint leaves, lime, strawberries, alcohol (which?) and what more?

Today the clouds have been upon us all day, quite a contrast to yesterdays 28°! But we are happy anyway, it's not raining! :)
The camping is very nice, peaceful and pretty. Just took a walk before off to give a Zumba class to all the LCHF enthusiasts!
A short trip to a wonderful shop and café where they sell grass-fed organic meat and foods! The place was quaint, lovely and tastefully decorated. It's an old train station building which they have re-done into this butcher/shop/café.
Our annual LCHF get together has begun. This year in a Swedish town called Säffle. We were a large group that arrived already yesterday, more arriving today and tomorrow.
The weather was awesome! The bbq lit and we had a lovely evening.
1 Portion
1 egg
1 tbsp heavy cream
1 tbsp coconut flour or almond flour or none (just helps to keep it together).
pinch of cinnamon
Mix all together. Melt 1 tbsp of butter in a pan and fry the omelett like a pancake. Turn over when one side is done.
Serve with freshly whipped cream and berries. The kids usually love this one!
Yesterday my colleagues took me out to celebrate my upcoming birthday! It's very big in Sweden when someone turns an even number with a zero on the end! (Like 40)! ;)
We had a champagne tasting which was fantastic, all very brut - dry dry dry! Yum! Then an awesome dinner:
- French Oysters
- Fresh tuna tartar
- Goose liver, clam and crayfish tail
- Lamb fillet with boilded beetroot
- Strawberries and cream
- Coffee and cream
A lovely evening! But not so lovely this morning - my head is not having such a good time right now! But I know it will get better soon! :)
Lots of energy, lots of people, loads of sweat and many smiles! The class was really amazing - so much energy all around! :)
One of my best friends (going 34 years back) is a top photographer in South Africa. Monica (Monica Dart Photography) did a wedding where FJS Productions were doing the videography. It was the wedding of the world famous photographer, Chris Simpson.
Monica says it was the most emotional wedding ever! Watch, enjoy, think about it and wipe your tears! Beautiful Cape Town in the background!

My daughter turned 7 yesterday! So it was party time. I am not at all into the whole candy, soda and cookie thing! My idea was to have eats and foods that were more low carb, more healthy and still enjoyable for 8 small princesses! :)

Firstly a swim. Then food:
Sausages
Bearnaisse sauce to dip sausages in
Cocktail tomatoes to eat with fun bumble bee toothsticks
Juice with extra added water, juice is otherwise way too sweet!
Treasure hunt - but not for candy! In the treasure box was lots of stickers for the kids. They loved that!
Cake time:
Juice with water
Milk chocolate (just a bit)
Watermellon
Swedish buns (muffins) - not so low carb but very traditional, so I hade give in here.
Cake: Small amount of vanilla ice cream, heavy cream whipped and loads of strawberries on top.
VERY happy and satisfied children that did not get all speeded by too much sugars! Me like! :)
An omelett filled with meat, cheese, butter and leek! It's Monday - a call for good breakfast and eating habits! :) Coffe with cream coming up too!
Life is luxury at the best of times! It's Monday morning - say no more! ;)
Today my little sweetheart turns 7! Strawberries in bed, and pressies!
Later today is her party with 8 little friends... I am not comfortable with the whole candy, cake and soda thing - even if she only has a birthday once a year!

Midsummer was great! We had a lovely time with friends! Lots of great LCHF food, although some did have potatoes ;) ... NOT ME! I just couldn't!
