I just love these! As a snack or with different dips, to soup or with a main meal...
Use a good and tasty (high fat) cheese. Either slice it in slices and fold double or put small heaps of grated cheese on a baking sheet on oven tray. You can even spice them if you like with paprika powder, peri peri or peppar - use your favorite spice!
Grill high up in oven @ 200°c for 5-10 min. Keep an eye on them and when they start turning brown, remove from oven.
Enjoy!
Zumba toning is a Zumba class with toning sticks... A lot of focus is on the body, position and tecknique. Very important how to hold and use the weights! Great fun and a good workout for the arms!!!

The food in the café left a lot to be desired though! Nightmare foods.... ALL was just sugar!
But I had my egg wrap with me so I was fine! :)
750 ml red wine (or alcohol free wine)
Grated peel of half an orange
1 tsp kardemum spice
1 stick of cinnamon
1 tsp of dried cloves
100g mulberries or blueberrie (or other berries)
100g raspberries
200ml vodka (lime flavour is good) - optional
Add all ingredients into a pot, just before boiling point remove pot from heat! Leave to 'rest' for 1-3 hours. Siv the 'glögg' and pour over into a bottle.
Warm in small mugs and enjoy with peeled almonds in it! Very typical Swedish drink, lovely when cold out!
Manufactors want us to beleive we are saving money, that some foods are cheaper! BUT they are fooling us consumers!!! The cheaper the foods, the more weird things they contain. MSG (E-621) is one that we def. want to avoid! It's a poison. Kids should NEVER eat anything with MSG!!!!
But manufactors are realizing that we (the consumer) are becoming more aware and avoid foods with MSG! So therefore they 'change' the wording! Instead they use 'yeast extract' but it's all same same!
Rread labels on the things you buy, especially meats, cold meats (ham etc), soups, sauces, all kinds of stock, marmite....

If there is one thing that is worth paying that little bit extra for, it's organic eggs! The difference between organic eggs and 'other' eggs is huge! Both taste, nourishment, the hens life and the enrivonment.
The hens have a much better life than 'non-organic hens', they live like they are supposed to live. There are no GMO organisms in organic eggs, the food the hens eat is produced without pesticides or other chemicals!
AND organic eggs contain so much nourishment (all eggs do, but organic eggs even more so). An egg provides the body with EVERYTHING you need except vitamin C! Now isn't that amazing?
So eat eggs, lots of them! I eat around 8/day and have been doing so for the past 3,5 years - my second name is 'Healthy', my cholesterol is PERFECT, my blood sugars low and my blood fat excellent (I have done all the tests!) :)
Out with the bagel in with a muffin? All they do there is swop carbs for carbs. Your insulin will still shoot way high, which adds fat to your body! Keeps your cravings cominga and does not fill you up at all!
And people know no better than to buy this crap and hope it will work for them only to find out that 'they' have bad will power! It's not about will power - it's about how YOUR body reacts to insulin tops!
Out with the bread - agree there, but in with an egg and mayonnaise instead!!!
I have been very obsessed with my scale and my weight! With following results:
- Frustration
- Depression
- Happiness
- Desperation
- Disappointment
- Expectations
- Let down's
- Bad moods
Throw out the scale and use a measuring tape and your own clothes. The scale is never fair to you! It just pust your life and moods on a roller coaster! I have not used my scale for almost a year - having said that, it does not mean I don't struggle with my weight still - co's I truly do! But I can feel it on my clothes, then I know it's better to be more strict or cut down on all the wine or eat a bit smaller meals...
My moods are so much better for it! So throw out the scale and learn to enjoy every morning in the bathroom! Use a few items of clothing as your 'clothes scale' :)!
A clear favorite in my fridge is Hellmans mayounnaise! It is so good! Low in carbs, in fact the lowest I have seen! No colourants, and with great taste! :)
I just sent in a huge order for more omega-3! We 'eat' way too much omega-6 which is inflammatory when there is too much of it! Our bodies need an equal amount of omega-3 and omega-6, 1:1! Today we eat more or less 1:17!!! Not good!
How come we have so much omega-6 in our bodies?
In all oils, especially sunflower and other seed oils there is lots of omega-6, in margarines, in nuts, avocado, some meat... BUT we do need a small amount. So avoid the oils - olive oil over your salad every now and then, and with the nuts and avocados you will def. get what u need!
Omega-3 you can find in fatty fish like makril, Norwegian salmon, herring, eel... In order to 'eat' enough omega-3 you should eat fatty fish 3-5 times every week! Who does that?
My whole family takes omega-3, the youngest does not take the capsules so she has it runny on a spoon :) ! The rest of us take at least double amount of what is stated on the packaging! :)
So do we have to take omega-3???

- Protects against bloodvclotts, eye illness and dementia.
- Builds the brain of a foetus.
- Helps agains heart disease, high blood pressure, arthritis etc...
- Lessens the pain of sore joints and stiffness.

- Prevents mood swings and depression, increases the feeling of wellbeing.
- For children it has helpe those with learning problems, dyslexia, those with difficulties to concentrate and ADHD.
- Gives an anti inflammatory affect.
Some eggs with butter for breakfast! And now a cup of lovely hot coffee and cream! A good beginning for this day! :)

Children do great on LCHF! They should always eat lots of good fats - they need it! But carbs they don't need - especially not the 'fast carbs' like breads, rice, PASTA, sugar, sweets, juice, soft drinks... The carbs they should eat are all veg, potatoes and sallads.
They use the energy that carbs give their bodies, but they are even better off without the 'bad carbs'. In what way? Their moods are better, they are not hungry as soon as they would be if they ate lots of carbs, they are less agressive, they don't get cravings, their stomach works well, they sleep well...
Nowhere at all does it stat the carbohydrates are essential for the body!!!
Here is my 6-yr olds dinner. Sausage with 85% meat content, avocado, tuna with mayonnaise, cashew nuts, cheese and some sallad. She is as happy as Larry! ;)

A good start to the week is a good and filling breakfast!
3-4 Portions
3-400 ml blackcurrent berries or other berries
2 sheets of gelatin
1 tsp vanilla essence
400 ml full fat whipping cream
Follow instructions on the gelatin packet. Boil the berries in a pot for 10min. Mash them with a mixer until smooth. Stir in the gelatin and vanilla. Leave to cool.
Whip the cream and fold the cream into the berry mix. Leave in the fridge for at least 2 hours. Kan be served in small bowls, wine glasses or a larger bowl. Serve with whipped cream on the side.
Even a non-LCHF person will enjoy this one even without sugar! :)
Last night I was hired to give a Zumba class at a 60th birthday party! We started at around 10pm and danced for 45 minutes! It was great fun and everyoned joined in the party!
Saturday again, here are some good LCHF tips to inspire you this weekend!
- Eat a good breakfast and remember to add at least 2 tbsp butter to whatever you eat!
- Keep focus on your choices during the day!
- Some sort of 'everyday excercise' for e.g. a walk, gardening, cleaning or 50 situps!
- Buy a jar of organic coconutoil - an investment in your health!
- Surround yourself with friends that are positive and that don't ciritisize your choices!
- If you buy sweets for your kids stick to pure chocolate and or nuts, avoid all strong colours in sweets!
- Buy organic eggs - they are by far the best choice for you, nice for Sunday breakfast!
- Only eat one portion of food and eat more fat to the food - that is what fills you up. If you are still hungry afterwards it was too little fat!
- Be proud, look in the mirror and tell yourself that you are in control of your life, your body and what you eat. You are good at what your are doing!
- Enjoy not only this Saturday, but the whole weekend, live life, feel healthy and feel the extra energy you are gaining from the choices of food you are making! There is a big difference! :)
Monique's cream and berry bomb
4-5 Persons
500 ml whipping cream, full fat
100 g blueberries
100 g raspberries
100 g strawberries or other berries
200 g nuts chopped (walnuts, pecan nuts)
50 g coconut
50 g pine kernals
Whip the cream, carefully fold in the berries, coconut and nuts. Save some for garnishing the top. Sprinkle dry roasted pine kernals over the top.
2 boilded eggs, 1 tbsp butter (pure butter), 1 tbsk mayo, herbs! yummi and filling!
My favourite clothing brand is Odd Molly! In Copenhagen I found a true Odd Molly shop! *Happiness* :) AND everything was on 70% sale!
A cultural visit to the Louisiana Art Gallery with friends!
My ideal pre-workout snack, if I need one! Today I do as I will be at the gym for 3 hours... So a bowl of plain nuts is in it's place! Sitting outside enjoying the views...
At last I am going to start to translate my web sight into English... I guess it will take some time, but I have to start somewhere!
