Low carb mayonnaise in a minute

LCHF majonnäs
Low carb mayonnaise

200 ml canola oil or other oil with neutral flavour
1 egg
1 tsp dijon mustard
1/2 lime – the juice
1/2 tsp grated lime zest
1  1/2 tsp vinegar
1/2 tsp sea salt
pinch of white peppar

(1/2 tsp of wasabi paste can be added – gives a lovely spiced flavour).

All the ingredients should be room temperature. Place everything in a narrow tall beaker or container. Place an electric hand blender in the beaker and blend for a few seconds, slowly pull the blender upwards and you will see the oil blending in with the rest. Done.
Store in the fridge, and lasta for about one week. In our home it usually gets eaten up the same day!

  • Use refined olive oil instead of Canola. Not extra virgin.
