Low carb Roasted tomatoe soup with a touch of basil

6 servings

5 large tomatoes
1/2 bunch fresh basil (3-4 tbs chopped fresh basil)
100 g butter
2 onions
1/2 cauliflower head
3 garlic cloves
1/2 bottle of tomatoejuice (400 ml)
500 ml water
1 orange, grated rind from half the orange, juice from the whole orange
700 ml cream
salt and white pepper
1 tsp paprika powder
1 tsp curry powder
1/2 tsp cayenne pepper

Creme fraiche

Boil tomatoes for a few minutes, then peel them, much easier once boiled. Cut them up and place on baking sheet, chops somebasil and sprinkle over the tomatoes. Roast in the oven for 20-30 minutes.
Melt butter in a pot, chop the onions into chunks and fry in the butter. Add the cauliflower, chopped, and garlic. Fry together for a few minutes. Add the tomatoes. Pour in the water, tomatoe juice, spices, grated orange rind and the juice of the orange and leave to simmer, stirring occasionally, for 40 minutes. Chop the basil and add it to the soup, pour in the cream and bring to the boil. Mix the soup until smooth using electric hand beater or food processor.

Server with creme fraiche.
