Beef stew with fresh coriander and parsley
200 g ghee/coconut oil/ butter
500 g beef for stewing
2 onions
5 mushrooms
700 ml water
3 chopped cloves of garlic
1 fennel (if in season)
1 tsp paprika powder
3 tbsp worcestshire sauce
1 tbsp dried coriander
1 tsp ground nutmeg
2 tsp sea salt
1 tsp fresh ground pepper
1 tbsp tomato pureé
300 ml cream
200 ml creme fraiche
10-15 brussels sprouts
1/2 head of broccoli, in chunks
1 bunch chopped fresh coriander
1 bunch chopped fresh parsley
Melt the oil/butter in an iron pot (preferably). Cut up the meat into smaller chunks and brown in the pot. Add mushrooms (chopped) and onions (chopped), fry together for a few minutes. Add the water and fennel and allow to simmer for 40 minutes. Pour in the cream, add creme fraiche, brussels sprouts, broccoli and simmer for another 30 minutes (at least). Add the chopped fresh herbs and mix together. Simmer for 30 more minutes. Taste and add more salt and pepper if necessary.
