Chicken and mushroom stew with 3 onions

4 portions

 

4 Chicken fillets

2 Tbsp coconut oil

100g dried mushrooms eg. chantrells minsed with mixer.

15 cm leek, finely chopped

1 yellow onion finely chopped

3 cloves of garlic finely chopped

400 ml cream

200 g chopped cauliflower

Seasalt and white peppar

2 Tbsp white vinegar (balsamic is nice)

1 Tbsp dijon mustard

2 egg yolks

 

 

Heat oil in a pot, add the mushrooms and fry for a few seconds.  Add chicken cut into small pieces.  Pour over cream.  Bring to boil and add remaining ingredients except egg yolks.

Allow to simmer for 10-15 minutes.  Add egg yolks and allow stew to thicken. 

 

Serve with broccoli or mashed broccoli.
